You know, if you served tofu to people expecting sliced steak, I think there would be significant disappointment.

Tofu! That's what I say, but maybe tritip. I think sliders are pulled, never sliced. But hadn't thought tritip.

Actually, the slider's correct usage is to describe a very small hamburger (approximately 2" diameter) with the traditional ground beef patty. The concept was popularized by the White Castle burger chain.

Today, the term "slider" is used to describe a wide variety of sandwich/burger type creations that are served on a slider bun. If you're a language purist, you'd bristle at the dilution of meaning but "slider" is pretty widely accepted to include a variety of fillings including pulled meats.

Anyhow, I like tri-tip myself which is why I suggested it. It's a classic California cut too if that means anything to you.

No kidding. What a drag.

We like to use American Wagyu beef as the fat % is perfect.
Grind it yourself and save $.

Costco - Seasoned Tri-Tip (not Kinders or Omaha Steak) is my favorite. Roberts Market also has a pre-marinated tri-tip that is pretty good but the price may shock you
